Prepping a variety of foods every Sunday makes it SO easy to put together breakfasts & lunches for the work week, as well as having items cooked and on hand for weeknight meals! I typically will make some sort of vegetable, a protein, a dessert/sweet treat, and sometimes i'll whip up other random things that I come up with on a whim :)
Today's menu consisted of a few staples:
- Roasted Broccoli
- Crustless Pumpkin Pies
I also made a batch of quinoa (1 cup quinoa and 2 cups low sodium chicken stock) and 8 individual tilapia fillets - forgot to snap pictures! I think i was focused on eating a pumpkin pie at that moment.....Or maybe snapping pictures of my husband instead.
I'm going to continue the concept of 'Sunday Food Prep' every week, and maybe it'll allow me to get even more creative in the kitchen!
