Today I had off of work in observance of MLK day. I slept in, worked out, made a Costco run, cleaned the house, then it was time for food prepping. I made a bunch of roasted broccoli, tilapia, chicken, banana muffins and then decided to try a new spin on my semi-homemade cornbread.
So, I may have a new favorite. This stuff is amazing…. like ‘I may eat the whole pan' amazing. But I promised a friend i'd share - so I guess i'll save some.
What I love about this, is that it is semi-homemade. I have my gluten free cornbread box mix, and then add in my own mix-in’s. Super simple!
I couldn’t believe how great this bread turned out. It looked so pretty on the outside and thankfully, was just as gorgeous on the inside. It reminded me of the blueberry loaf I used to get at Starbucks years ago!
This recipe a great gluten free swap that still tastes delicious… if not more so.
I am pretty excited that a new Aldi is opening up 4 miles from our house - as i’ll be stocking up on some more GF cornbread… i’ll try not to buy out the shelves.
