I figured I would hop on here this morning and post a delicious salad I've made a few times during this busy week. It is a dish that is simple, quick, and super tasty!
The Chicken Nuggets in the LiveGFree line are SO good. They are more like little popcorn chicken bites, and have a perfectly thin crust that doesn't get soggy or gummy tasting like other GF chicken nuggets I've tried. The chicken actually IS, well, chicken, and tastes like a perfectly cooked chicken breast; seriously. I was just as shocked discovering all of this.
- Cook the chicken nuggets; I prefer baking in the oven, but they actually hold up quite nicely in the microwave if you are short on time.
- Pile your plate with tons of lettuce; iceberg, spinach, romaine, butter...whatever your heart desires!
- Dice up half of an avocado and slice the nuggets - then layer on top of lettuce. I also added some sliced banana peppers to this one!
- Drizzle with honey mustard dressing (I make my own: Honey Mustard, Vinegar and Drizzle of Honey... shake shake shake and its done)
