I figured i'd write a mini "Hello" & "What i've been up to lately" - post. I was looking through the last few pages of my blog and realized I've (mostly) posted recipes for sweets & desserts...... which, of course, is perfectly OK. But I thought i'd switch it up a bit this go around.
Speaking of family - we're going to have quite the busy Thanksgiving this year. Of course - both sides are having Thanksgiving on... well, Thanksgiving (IMAGINE THAT!) - but we're going to do our best to make it to both. We will have a one our drive to my parents - then will have to leave mid-afternoon to make the ~2hr drive to Joey's side for dinner. I am already getting tired thinking about it, but it will be nice to visit with everyone that day. Plus - now Joey and I will have Friday through Sunday with NO travel plans. Wahoo!!
When it comes to Thanksgiving food - i'm going to whip up my Sweet Potato & Apple Bake for both get together's, as well as some Gluten Free Cornbread. I'll be sure to post about those later on this week!
What type of dishes are you preparing for Thanksgiving this year?
Also, i'm going to be completely honest. I'm a bit indifferent when it comes to snow. Typically - I hate it. I've lived in Wisconsin my whole life and still don't really enjoy it. I'll admit I do enjoy the change of seasons we have here, but I get such awful anxiety driving on snow covered roads. However, when its a day like yesterday - when my only plans were to bake and relax, I sure love looking at it.
Its quite pretty when you can enjoy it from INSIDE your home. :)

I can't believe it; two years. These have been the most bittersweet two years of our lives. Planning our wedding in ten days because my Mother in Law's cancer spread, to her passing away two weeks after the wedding, to buying and moving into our first home, to having our fabulous wedding reception, to us going through my journey and battle with Hypothalamic Amenorrhea and Infertility. Its been a lot to take in, but I know for a fact that all of this has made our marriage and relationship with one another that much stronger.
I can't wait to be celebrating our 60th anniversary with our 10938423 children! Ok - maybe not that many... but you get my point! LOVE YOU FOREVER, JOEY!!!!!
If you want to make these for yourself - follow my recipe for Pumpkin Spice Pancakes. Only change is: omit the pumpkin pie spice, and as soon as your pour the batter onto the griddle - sprinkle a few chocolate chips on top before you flip them. Easy peasy.
So, this post is completely random and a bit all over the place, and that is totally OK. I'll be signing on again in a few days to post my Sweet Potato & Apple Bake recipe!
