GF Blueberry Muffins & A 'Namaste Foods' Giveaway! (GIVEAWAY CLOSED)

I LOVE making muffins and quick breads, and I use Namaste Foods flour in ALL of my baking. SO - when they (Namaste Foods) were willing to send me a goody bag of GF baking mixes AND wanted me to host a giveaway on my blog/Instagram, I certainly could NOT turn that down.

One of the products they sent me was their GF Sugar-free Muffin Mix and that is what I used to bake up these DELISH muffins. As a Mom to a toddler, I like making things that have lower added sugar, and then I sweeten them myself with things like fruit or applesauce! So when I saw they had a sugar free mix option, I knew that would be a great go-to pantry staple for quick breakfast/snack muffins - that I could feel good about giving Jack, too!

The ingredients of this mix are: sweet brown rice flour, brown rice flour, tapioca startch, arrowroot powder, rice milk powder, cream of tartar, baking soda, salt, xantham gum and ground vanilla bean! Another HUGE benefit if that their products are free from the top 8 allergens! 

The steps to make these muffins were the same as you'd see in a standard boxed muffin mix - 2 eggs, 1/4 cup oil and 1 cup water or juice (I actually used vanilla almond milk). So simple. You heat oven to 400 degrees, put liners in cupcake tray and lightly coat with cooking spray - then in a bowl, combine eggs, oil and 1 cup liquid of choice, once that is well combined stir in the muffin mix. *This is where I folded in a cup of frozen (rinsed/thawed) blueberries* Pour into cupcake liners, and bake 10-15m (or until tops become slightly golden brown) *mine took 12 minutes*

Overall, I was happy with the outcome of these muffins (and so was Jack). They really aren't sweet at all, but the subtle hints of blueberry and the vanilla from the almond milk were the perfect addition! I also think this mix has SO much versatility and when I make them again i'll do a savory cheddar biscuit/muffin (#yum)! You could even add dried cranberries, nuts, chocolate chips, etc.
